Chef Wesley Avila and his co-author Richard Parks III begin their new cookbook, “Guerrilla Tacos: Recipes From the Streets of L.A.” (Ten Speed Press), with the admonition “This is not a taco book. It’s a Guerrilla Tacos book.” The recipes that follow, from Mr. Avila’s popular taco truck of the same name, provide a highly personal culinary map of the chef’s native city. Above, a few examples, arranged on a matrix whose vectors don’t begin to represent the wild range of tacos on offer in this highly engaging and surprising book, and two excerpted recipes below. Consider it an amuse-bouche.
